Lavender Haze Cocktail ✨💜🍸

Over recent years I’ve become quite the fan of Taylor Swift’s music. For me it started with the album 1989 and recently I’ve been playing her latest album “Midnights” on repeat (much to the annoyance of my husband – I’m sorry love). Lavender Haze being one of my fav and one regularly sung in the shower.

Having seen many people come up with several cocktails for a lot of the songs, this one seems the be the most popular and I’m having a go at creating one too! This recipe has various steps with the first one to infuse and colour (naturally) your gin. As well as making a simple syrup (equal parts of whatever you throw in it) and how to make coloured glittery sugar for the glass rim.

Now, this cocktail is a required taste and if you don’t like a floral taste in things you might want to skip this one. However, if you’re curious (regardless of your taste), you should definitely give this one a go! With tasting notes of floral lavender, sweet white chocolate and the creaminess of almonds, this drink makes a lovely romantic drink, perfect to envelope yourself in a Lavender Haze

*many of the ingredients can be substituted for vegan alternatives or alcohol free options.

Ingredients

**for the infused gin**
400ml Gin
(Plymouth or Bombay Sapphire) good quality, no overbearing flavours
8 Blue butterfly pea flowers
dried
15g Lavender flowers
fresh
1/4 tsp Purple edible shimmer glitter
**for the simple lavender syrup**
1 cup Lavender flowers
fresh
1 cup water
1 cup sugar
3 Drops of purple food colouring
**for the white chocolate glass rim**
white chocolate
melted
60g granulated sugar
the courser the better
Purple food colouring gel
3 drops
1/4 tsp Purple edible shimmer glitter
**for the cocktail**
this makes one cocktail
40ml Lavender infused gin
40ml Lavender simple syrup
40ml White chocolate liqueur
40ml Almond milk
or your favourite
ice cubes
to shake with

Directions

**infused gin**
1. Start by infusing your favourite gin (that is free from any specific tasting notes, you want a clean gin like Bombay Sapphire or Plymouth Gin (i’ll be basing mine on this one)).
2. Add your fresh lavender flowers and blue butterfly pea flowers to your gin, give it a shake and leave for about 1 hour.
3. Strain into a clean container or bottle.
4. Add 1/4 tsp of purple edible shimmer glitter and shake to mix well, set aside ready for use.

**lavender simple syrup**
1. Add the water and sugar to a small pan & bring to a soft boil
2. Take of the heat and add the lavender flowers
3. Leave to infuse until fully cooled in the pan
4. Add 3 drops of purple food colouring and shake to mix well (not needed but does make it all more purple)
5. Strain into a container that has a lid and put in the fridge until use (refrigerated it’ll keep up to 3 days)

**white chocolate glass rim**
1. Mix sugar and 3 drops of food colouring to a bowl, mix really well, then pour onto a small plate to let the coloured sugar dry.
2. Once dry, add a quarter of a teaspoon of edible purple glitter and mix well
3. Melt some white chocolate on a flat surface (plate), and put your glittery sugar onto a second plate
4. Dip a champagne coupe glass into the melted chocolate followed by your purple glittery sugar
5. Swirl around to coat evenly

**cocktail**
1. Add Gin, Syrup, Liqueur & Almond milk to a shaker
2. ‘Dry shake’ all ingredients to combine
3. Add the ice and shake vigorously for 30 seconds
4. Pour cocktail in your pre-rimmed glass and imagine yourself in a Lavender Haze ✨
