Nasturtium Pesto

A fun twist on the traditional pesto

Ingredients

130g Nasturtium leaves
washed, for added spiciness you could add some flowers and seeds (only if still green!)
150ml Olive oil
90g Pistachios
unsalted, you could toast them for added nuttiness
90g Gruyère
grated
Juice of 1 Lemon
1 Clove Garlic
Salt & Pepper
to taste

Directions

To make the pesto, blitz all the ingredients in a blender, stir in the cheese, and season to taste. Eat it with some fresh ravioli, or use it as a dip. Also nice with bruschetta or with fish. This pesto also freezes really well.
